The Teas

All three of the major tea classes are made from the leaves, buds, and stems of the Camellia Sinensis plant. It is the differences in processing that make each tea unique.

(1) Black Tea is fully fermented
(2) Oolong Tea is partially fermented
(3) Green Tea is unfermented


Earl Grey: 

Traditionally the term "Earl Grey" was applied only to Black Tea; however, today the term is used for any teas that contain oil of bergamot.

Bergamot oil is extracted from the rind of the Bergamot orange, a fragrant citrus fruit.


Oolong:
Chinese language, literally meaning, black dragon (tea).
The tea leaves have undergone partial fermentation before being dried. Oolong flavors have a wide range of flavors (depending upon the extent of fermentation) from green and fruity to woody and roasted.
